The pass begins at Yaya’s table.
Before the knife work, the plating and the discipline of service, there was Yaya’s kitchen in El Salvador. Chef Sigi’s path through Spain and back home does not replace that beginning; it answers it. The tools here belong to the same story as the flowers, clay pots and recipe pages across the hall.
